Exciting news as Sarah and Tom Watts-Jones, owners of the renowned Hare & Hounds in Aberthin and The Heathcock in Llandaff, Cardiff, announce their expansion over the bridge. Set to open in July, their new venture, The Clifton on Regent Street, will replicate the success and ethos of their existing pubs.
Building on their reputation for serving excellent food, The Clifton will feature the same vibe, with the added allure of all meats being cooked over an open wood fire. Some key team members from Hare & Hounds and The Heathcock, including the former Sous Chef of Hare & Hounds, Corey Scott, will join the new venture as well.
Given the success of their other establishments, the launch in Bristol is highly anticipated. Hare & Hounds recently claimed the title of The Wales Pub & Bar of the Year 2021, beating out eight other shortlisted Welsh pubs, while The Heathcock has been shortlisted for 2023’s list. Notably, The Heathcock garnered praise from food critic Jay Rayner, who shared a glowing review of the establishment’s contribution to the city’s foodie scene.

Sarah and chef Tom returned to Cowbridge eight years ago after gaining experience at renowned London venues, such as Anchor & Hope and Michelin-starred St John. Since then, they have transformed both pubs into successful restaurants. During the pandemic, they even adapted to sell baked goods from their front car park, eventually establishing a standalone bakery for their skilled bakers.
Their success can be attributed not only to the quality of their food and inviting atmosphere but also to their commitment to nurturing talented chefs. For instance, David Killick, formerly the Sous Chef at Hare & Hounds, now leads the kitchen at The Heathcock.
The team’s dedication to supporting local suppliers will extend to their new Bristol site. Sarah affirmed, “We’ll be sticking to what we do.” Reflecting on their Welsh establishments, she added, “We’ve always made an effort for everybody. Everybody’s welcome. We’re really child-friendly, we’re really family-friendly, bring your dog and enjoy meat in the bar. We’re not aiming for fancy; instead, we prioritize creating a relaxed environment.”
Their aim is to capture the essence of their London experiences, maintaining a casual and informal ambiance while delivering outstanding quality and supporting local businesses. At their new restaurant, guests can enjoy a pint or a glass of wine with a bag of crisps, knowing that they are experiencing the best value and highest quality beverages in the area.
